dc.description.abstractFrom methanol extracts of black shallot (or shelf-fermented shallot) (Allium ascalonium L.), eight compounds were isolated by chromatography and Identified as: 5-hydroxymethyl-2-dlmethoxymethylfurane, methyl (2S)-5-oxo-2-pyrrolidlnecarboxylate; 5-hydroxymethyl-2-furaldehyde; methyl p-hydroxyphenylacetate; nolinospiroside D, (25R)-1β,3β- dihydroxyspirostane 1-O-β-D-galactopyranoside; alliosplroside A and (25R)-1B.3B-dihydroxysplrost-5-en 1-O-α-L-rhamnopyranosyl-(1 → 2)- α-L-arabinopyranoside. Their structures were elucidated and confirmed by NMR. These components were isolated from shelf-fermented shallot (Allium ascalonium L.) for the first time.vi_VN
